Winter holiday season is tamale season. BTW, be on the lookout for a killer article in the Sacramento Bee on Tamalada, tamale making at home. But for now, this is a great video of the Zocalo chef making the foundation of all tamales: Bad masa can ruin a good tamale. Good masa makes the tamale as much if not more than the filling.
